@b8f38d97d1f2a365 have you tested it in your game on NPCs in Other Households? Also are you on PS/PC/Xbox? I can edit all of this after Sims are created (I'm on Xbox Series S). So I'm wondering if there's a technical problem/bug.
I randomly changed a bunch of NPCs genders, orientation along with some of the Sims I'd already created. I've just been testing a bug with staff uniforms and it required me to change a few more NPCs in Other Households and it all worked. But I do sometimes get a problem where a Sim CAS profile won't let me edit things, it's random and I don't know why it happens.
So I'd try and see what happens when you edit Sims you didn't create, maybe try several and see if you run into any problems and report back here with what happened. It may be you are looking at a bug.
