The UI of my game (such as sim display, date and time, needs etc) keeps disappearing. I recently updated my game to version 1.112.481.1030 and i am also using DX11. This started happening after the update released on January 14th.
I have all expansions, all game packs except journey to batuu, all stuff packs and 15 of the kits.
If you are a mod user and are using UI Cheats, the update broke that mod. You'll need to update it. If you are using any other mods that affect the UI other than UI Cheats, then it's probably broken as well and will need to be updated.

Yeah i removed my mods before the update and this still happened.
A couple of things you can try. Delete the localthumbcache file before you start the game next. If that doesn't work, then run a repair.
