I have been working on a medieval play through based on my d&d world, so a holiday I would institute is Sun's Awakening. The Sims stay up all night on the darkest night of the year, have a grand meal, drinking, and being merry. They light fires to stay warm and tell stories of the past to remember both good and bad. They sing songs that stave off the dark, and nobody can leave the house until dawn or they will be harassed by ghosts.
Thank you for the opportunity!
