I actually have to work really hard to get my sims looking like any other ethnicity. Most of the preset eyes are very "Asian" and the majority have monolids. I love this look, but not when I'm going for another ethnicity, then its just frustrating. Most of the eyes that aren't monolids have those silly freaking eyelashes, if you can even call them that.
I'm actually having the same issue. I'm finding it harder to make a caucasian sim than an asian one. In fact, I can pretty much mimic any ethnicity but caucasian in this game.
