I only watch the game changers if there is a new pack out, because other than that, they just build stuff which I find kind of boring. I tend to watch one Sim YouTuber off and on who breeds different animal offspring using pets with mods. I also kind of watch people taking Sims based on fiction characters and seeing their possible offspring too. So, mostly CAS stuff if I even watch Sims stuff on Youtube.
I have played Sims 2, so I knew what the game was already about, before even getting Sims 4. I really don't know why game changers are even a thing, though. I get a bunch of them gave feedback for the skin update, but overall, they don't seem to be needed.
