You can do one class per semester if that's what you choose to do. THat way, you'll need to have your SIm do 12 semesters (12 times 5 days) to be able to graduate.
Full-time jobs and Uni studies might be complicated though because your work and class times might clash. I'm sure it'd be doable with vacation days - I don't think you get skip days for classes but I might be wrong.

so 12x5 days - assuming they aren't having a scheduled day off work (which might happen in some cases) I'd need to have up (up to) 60 vacation days - that's probably the easiest way for them to do it and still keep their jobs.
That's doable - I wouldn't be getting the pack until it was significantly reduced (by like 50%) and some of my sims have 20 or so vacation days accumulated already.
I'm pretty sure you can also not go to class, it will just lower your performance somewhat, the same way as when your Sim doesn't go to work (which from my experience isn't a massive performance drop). There will likely be more info on this as GameChangers get their hands on the pack and start doing Let's Plays as I'm sure at least some of them will do the "working parent goes back to school" storyline :)
