I had a retail store also. I decided to try it a while back and I found that while it's nice to have employees, you have to watch them and make sure they show up and actually do their job. I had a few where they did nothing including the stuff I asked them to do. They just chatted with people and played on their phones. Or even leave in the middle of a shift.
I did have a family of four running the store though. I only had employees to compensate for the teens going to school during the day. After a while I just said forget it to the employees altogether and only opened the store when the teens were home from school. Sometimes I never closed the store, but those were my "closeout" sale days when I was growing bored with what they were selling and eventually with the entire family.
I had one of the parents have a career and one parent running the store. As for loiterers and others I usually had a parent tend to them. If they were questionable I wouldn't hesitate to ask them to leave.
I didn't play that part for the profit (didn't earn all that much) but more so I can say that I played that part of one of my packs.
I can't say I wouldn't go back to doing another store, it just takes so much time and effort though.
