Of course you have to close it afterwards otherwise the plants won’t be able to grow year round which is the entire purpose of putting the plants into the greenhouse in the first place.
I didn’t bother to delete a wall. I simply left the roof off with ceiling tiles deleted, added the sprinklers, then put the glass roof on. You will get puddles on the ground which will make your sims grumpy, but, it sort of works
