My Sim is in the Socail Media career and I selected Work from Home and one of her assignments is "Brighten the day of a co-worker twice" but I'm not sure how to find a co-worker when she's working from home, and selecting a random Sim visiting mine doesn't seem to work.

Go to the relationships panel of your sim and hover over each of the sims. There should be information on the work hours of the other sims and also a symbol that says that they are your sim's coworker.
