My Sims can only cook vegetable dumpling and the other foods is blank out and what does it mean?

See whether you have “Use Fresh Ingredients” checked right down the bottom.
If I’m right, you should still be able to cook the pale/faded/blanked recipies. You just wouldn’t have the fresh harvestables and it would cost more that if you did.
