I lucked out my first sim's time at Uni, as I accidently enrolled at the end of the week. She got the whole weekend to do her term paper and presentation, for every term. She managed to pull off graduating with straight A's for a distinguished degree in Art History, while keeping her work from home career in the trendsetter field. That first term was a horrible pain in the rear. She did much better when I moved her out of student housing and had her live alone. Yeah, she missed out on a whole bunch of student activities, but since she was just focused on getting a degree to further her career, it worked out well. Her story line was that she was a little bit older than the other students, and had gone back to school after working for a few years.
The only problem I had was that during the last term, I had to take away her bicycle. I would send her to class, and she would get there just a little bit early. She would promptly get on the bicycle and ride around for about half a hour. She was late for multiple classes as there was no option for me to end her ride.
By that last term, I had learned how to make my sim behave as a good student, and managed to send her to some pep rallies and debates. Her trendsetter job pretty much just meant talking to 3 sims a day about fashion, blogging, or taking 3 photos, so that was easy to add in. During the last term, she had a couple of games of juice pong, flirted with the mascot, and celebrated my "Hot Times" holiday by streaking around campus on graduation day.
My advice is to start at the end of the week if you can as it helps so much with time management.
