The more I think about this the more glaring it becomes. Just considering my immediate family, none of their jobs are in the game and they're all quite normal. I'm a trainee teacher, my mother is a barmaid (before which she made shoes), my father has a one man repair business when he's not working as a secretary for his town's football club, my uncle puts bathrooms together, my step sister is a dog groomer... None of that is in the game to any actual extent, and there's so many other things too like you say.
There's a lot of trendy stuff but not a lot of realistic or normal stuff.
Maybe they don't have much life experience in these jobs so they don't or can't think how to protray these in the game? Such as my dad was a heavy equimpment operator, dozer, pan and other land moving machines. So many I can't even think of the names of those right now. Another in my family was a brick layer, another at the plant that made bricks that is a very dirty job when you see them come out of there. Many I know became electricians (pretty good money by the way, and don't need a pc to learn it), I think this game needs more trade schools and apprentice jobs, and one young man I knew is still a welder today, and I'm sad TS4 is just nothing more than social networking and stuff like followers on a Simtube, when there is a whole big world out here, and no not everyone wants to get followers on a site, and it's in their DNA to work with their hands. My mother a seamstress, which is always needed if you want quality over quantity. I don't understand why a fashion career of sorts in TS4 leaned more toward post pics on a Simsite in game etc. rather than the job including a seamstress, who was actually creating the designs not just drawing them. It's not all automated, and or on an assembly line, or all about likes for a Sim in even these careers, someone has to do the actual work, and TS4 is missing the mark in diversity if you ask me. Diversity in careers/jobs. This game leans one direction-social networking when it comes to jobs and or careers. The part time jobs they included recently is like oh, hey, these aren't real jobs but you can pick up a few bucks if you do them, whenever. Sort of insults those who do these things.
