Do you give other sim households careers? Should I?

I do, but I usually play all my Sims at least one day in my rotation so it feels like they are progressing a bit.

You can also register them at the Ministry of Labor if you don't want them to work in outside jobs, so they will tell you they raise plants, or sell their homemade items on Plopsy, or go beachcombing for a living.
