Yes to creating a club for them to meet. Just adding a sim to the same club as your sim will make them acquaintances and you can even delete the club right away if you want to. I would probably do that and then travel with them somewhere and pretend they just bumped into each other there.
The online dating profiles in Sims 3 were cool. I liked seeing sims from the neighborhood in there. The Sims 2 matchmaker seemed to spawn a sim out of thin air (but I could be wrong), it just seemed so random and hardly ever worked out for me.
