Traits are secondary to emotions when it comes to sim behaviour. Regardless of their traits sims will act the way their emotions dictate. Therefore for a grumpy sim you'll want to minimize the occasions your sim receives happy moodlets and that's easier said than done.
Lazy - will get happy from comfy furniture
Mean - will become happy from being mean to others
Loner - will become happy from being alone and tense from being around strangers
Gloomy - this one should be save
I suggest Hates children (gets tense when around kids or even toys, a few well hidden toys in the living room will work wonders!) and Ambitious (will get tense if no promotions come along, easily done by making him do woodworking for a living instead of a job) along with Loner to maximize the Tenseness potential. For their starting aspiration consider Deviance, because of the bonus trait that makes mean interactions more powerful. Once ingame change the aspiration to whatever you want.
