I wouldn't worry about income, sims tend to be able to turn everything into income. Not sure if they will become millionaires by selling milk, but you could try set up a milk farm with a shop on the large 64x64 lot and sell milk and cheese. When the cow is about to die you can trade it for meat instead and no income is lost.
