I shall take a crack at answering my own questions:
Ethnicity
How do you approach ethnicity in your game?
When I see a Sim in-game or create a Sim of my own, I attach a cultural identity to them.
Do you avoid playing, marrying, creating, or interacting with Sims of certain ethnicity?
Not totally. I tend to lean towards interacting with diverse and attractive looking Sims. Sims that look like they have personality.
For breeding purposes (lol), I tend to consider the look and skin, hair, eye color of the Sim for genetically appealing children.
What personal/cultural ideals do you fell you impose on your Sims?
My Sims do not get divorced. I don't think I've ever divorced a Sims family, ever.
And they rarely cheat on their spouses if ever.
Do you create characters of a different ethnicity than your own and give them stereotypical personalities, hairstyles or clothing?
I mostly create Black Sims; however I've created and exclusively played an alien family (TS2) and Chinese family (TS3).
Do your Sims closely reflect your personal ethnicity and cultural values in gameplay?
Yes. They also reflect ideals I would like to aspire too and incorporate more in my real life.
Do you incorporate socio-economics when creating Sims of various ethnicity?
I'm not sure.
Sexuality
How do you identify your Sims in regards to sexuality and gender?
I see them as male/female and straight/gay/bisimual.
When and how do you choose your Sims sexual preference/identity?
Before creating a Sim I decide. If it's a family of children, I decide a ratio based on maintaining the family bloodline.
Do you avoid creating LGBT/SGL Sims or do you incorporate them actively?
I incorporate them selectively.
Do most of your Sims or your main Sim reflect your sexual identity?
No. They are usually straight, married with children, and have normal jobs (business, doctor, polotics, etc.)
How do you feel about playing romantic actions with a Sim of a different gender or sexual preference than you?
I just realized that I have only played one lesbian couple in my entire Sims career. I don't even remember if they WooHoo'd or not.
If playing a couple of opposite genders, do you engage certain romantic interactions with one gender?
I instinctively engage romantic interactions via the male; however, I remind myself to not do that during gaemplay.
In same gender couples, do you place masculine and feminine roles on them?
Nope. I don't think I do that at all.
Religion
Did you notice the absence of the word "Christmas" from The Sims team and do you have any thoughts on that?
I've noticed the use of Kwanzaa and Hanukkah in-game; however, the absence or inclusion of the word "Christmas" or any of them don't bother me. Though I like Sims versions of holidays better like Snowflake Day (I don't like Simsmas) and Feast Day. I wonder why there is no Sim name for Kwanzaa or Hanukkah in-game.
Do you incorporate religion/spirituality into your gameplay?
Only in Medieval Sims, but I'm thinking of incorporating that game's religions in my TS4 gameplay and storytelling.
Do you view yourself as a God or eternal being among your Sims?
I never identified myself as a God in relation to my Sims or even thought about it previously. I do see myself now as a Director of my Sims.
How do you view/observe life and death in your gameplay?
I think it heavily reflects real world life/death,. but in a virtual sense of course.
Do you consider your Sims to be of a certain religion?
I guess I thought of them as Chrsitians, but never articulated it. But now I like to think of them as Peteran and Jacoban and myself as The Watcher.
