I have the same problem for both hair AND eyes. I haven't tried changing them in full edit mode yet, though. for hair, it doesn't seem to matter when it comes to genetics. I have an entire family with black hair, and my kid's hair just kept changing to blonde or red. it only happens with certain hairs though. the eyes just do it no matter what. it's super annoying.
