With regards to over-lapping festivals. Usually, if your Sim/s stick around and stay the entire time until the festival is over. It will automatically fix the problem with that.
You can also create a new Sim, have them stay till the end of the festival, then it fixes it for your other families. Found that out by accident when I added a Sim to my rotation (a member of my original family -- I moved him to San Myshuno to do the City Native aspiration).
I haven't even played the acting career yet -- I've been enjoying making my Sims famous outside the acting career. I have one Sim who's a stylist and a B-level celebrity; her fiance is also a B-level celebrity as a painter. I also have a new Sim who is an athlete that's working his way up the ranks; he may be the one I play the actor career with after he makes it big as an athlete. (If he has to do any action roles the maxed out Fitness should help.) My stylist uses the video production station a lot to make beauty product videos and such.
