I've been where you are before @smurfy77! Some of the things I like to do include:
-limiting money/income. You could start with your money at 0, you could build a house but then only give them $1000 to start living life and pay bills, etc. This can be super interesting if you play rotationally like I do and sometimes come back to $4,000 bills and a $1,000 bank account (happened to me last week when I played haha. The family didn't starve but they did have to live in the dark for a bit?)
-creating niche clubs and groups. For example, I have a club for children who are outdoorsy, one for moms, one for rich people that I call the country club, etc.
-give teens jobs! I've found balancing homework, needs, social life and work make things prettyyy interesting for my teens
-create time themes. Some use cc/mods for this but I don't really use them, I just work with the packs I have. Create families set in a particular decade and have that influence their behavior, parenting, clothing, jobs etc.
-create your own jobs! This is something I just started doing but it's super fun. You would need to use money cheats depending on how you do it. Just make your sim self-employed and give yourself goals based on that. For example, choose any job you'd like to see in the game and name that as your sim's career. Decide on 2-3 skills they need to max for the top of the career, plus a few areas they should brush up on and just need a couple points for. Decide on days/hours to work, a pay amount, and tasks your sim will need to complete daily. Once you finish your "daily tasks" you can cheat in money for your pay if it's something that's not directly marketable, like painting would be. Get creative! Essentially your goal is to mimic the get to work live careers, but it's 100% up to you what happens.
-don't be afraid of drama! Is everything smooth sailing, too easy, everyone's friends? Do something about it! Have an affair, a mysterious pool ladder accident, introduce occults, etc. Try to consider how you want a sim to react--maybe some don't mind aliens, but maybe some don't like them and won't befriend them; Maybe the entire neighborhood ostracizes a sim for cheating on a well-known and loved sim around town. Etc.
Not all of them work for old fashioned play but I hope this helps and spurs your imagination :)
