It really depends on what my Sims would want. I've only had a few weddings, but one was at the Bluffs, and a couple were at Sim's houses. One was at a karaoke bar in San Myshuno. One couple just eloped. The couple who married at the Bluffs had their first date there, so it was meaningful to them. One of the Sims who married at the karaoke bar loved that venue more than his actual home.
Some of my Sims change their names, but not all of them. I've had a couple of men take their wives' last names. Some couples hyphenate their last name. Vlad's wife took Vlad's last name, of course.
I've had both men and women propose to their partners.
I do like to add wedding rings to Sims who would want to wear one, but I don't always remember until later on. I've never used an engagement ring.
