I play on normal life span and I'll pause aging periodically if I want to spend time with a specific sim at a specific age for longer.
Usually, I try to get through the child phases without pausing but I sometimes pause aging for YAs and adults. My StrangerVille hero didn't have money or mood cheats but I turned her aging off so I wouldn't be thinking about it during the mystery. Once a sim has a kid or kids, I usually no longer pause aging.
An exception is if I'm playing an adult like a GTW sim or I really want a parent to leave the house, I may pause aging during the toddler phase. I like to give all the toddlers an equal amount of time for skill development. I also have a rule that they must be potty-trained to age up because otherwise they would not be admitted to school. They can have any other combo of skill development but that's non-negotiable at their schools.
My unpopular op is that I really like the YA phase so I'll sometimes pause aging while sims are figuring things out. I'm playing a gradually aging generational rotation. It's gradual because I rotate out so they get time at the various life stages while I'm not playing them as NPCs around the various sim worlds. I like going to the community lots and recognizing different sims. I sometimes decide what to do next based on that.
