I run two week seasons as well, and as I want to have all seasons/a full year for uni what I'm planning to do is take two classes a term (one sim week), then have two week breaks (one in summer, one in winter) to cover the full year. So start in the Autumn, do three terms, have a week off for WinterFest/Winter Break, go back for three more terms, graduate in summer and then a week off or go straight into a job.
It's only two classes which may not be much, but I figure with organisations or with multiple sims that will be plenty. It was easy with my first sim as she was really high on skills, but others may not be, so I think it will be a good balance. Also this way if they fail a class they can do a busy term when they do an extra one, or are forced to do a make-up class over winter or summer break, which works well.
