For me the secret in handling (wrangling) this many Sims is to have them all at full autonomy. Then I can focus on the ones I need to focus on the most. Also, use the pause button, it is your friend! Queue up actions for those who won't or aren't doing what they should be doing, homework, work tasks, laundry, et al, and then un-pause. I'm never happier than when the lot is bulging with Sims. I also have walked down the dark path to using the Make Happy Cheat more often than I care to admit. The Sims' needs just decline so very rapidly in this game, it's almost a joke. And, yes, I do have a mod or two or three. ;)
@GalacticGal That is funny! I do the pause thing too. Especially in the morning when everyone is about to leave. I call it 'the morning rush'.
I say generally 6, but it depends on the ages and occupation of your family. I've had the misfortune of creating a family of 8: 3 teens, 1 YA, 4 adults. 1 adult had an overnight job, 2 had day jobs, and 2 had evening jobs. The teens did monetized skills. That family was so chaotic, that I had to split them up because they drove me nuts! It probably was my own fault due to the wide variety of schedules. I probably would have gotten away with it if they all had the same career. I'm also guilty of trying to build wealth fast.
If you have a family of 8 with mom, dad, grandma, grandpa, and children, you probably would be just fine.
However, with small families, you can really enjoy each sim. When you have more than 4, things get a little chaotic.
