Let's see... I have the one I consider my "main" save, which contains my legacy style families and other households that I rotate on an irregular whenever-I-feel-like-it basis. At one point I had as many as 5 legacy families in that save, but I phased two of them out, as it was beginning to get a little too unwieldy for me to handle comfortably. Those families still exist, and I still play them occasionally, but they're no longer considered official legacies (according to my own personal rules).
There's another save that I call "Rags to Riches" which contains non-rotating households that I play in that style (I only start another after finishing the preceding one). And one I call "Rent to Riches" that's pretty much reserved for certain NFSW stories. I have yet another save called "Selvadorada" in which all the sims I create are meant to be natives and/or descendants of Selvadorada, whether or not they actually "live" there. I have a few households that I rotate in that one. My newest active save is one I call "One Life" which is non-rotational, intended for playing one sim at a time from birth to death. So far I've only been playing one sim (and minimally, the family he lives with) in that save.
I also have a couple of saves for sim breeding experiments, building development, story development exercises, mod testing, and so on. In addition to these I have a few other saves that I may eventually get back to, but I currently don't play them very often at all.
