I play sims to relax and unwind and I don't like to feel rushed or stressed because they're close to dying or whatever, so I don't have aging on until I'm ready for them to be a new age and that way I can just enjoy my sims and let them do what they want to do without feeling like I need to cram all this stuff in before they have a birthday.
I actually like your idea of only having 1 outfit for each category and using the rest of the slots for everyday. I think I will try to adopt that play style and have my sim change each morning too.
