When I create a sim, I go through the painstaking task of creating 5 different outfits for all of the categories but I've found that I almost never ever change them. For "Everyday" I always create 2 s...

I only really change clothing when ageing up.
My 5 everyday slots get filled with long sleeve outfits for Spring and Autumn (how I wish there was a filter for long sleeve tops that are not sweaters).
Hot category has 5 Summer outfits.
Cold category has 3 indoors Winter outfits, one coat or jacket outfit and one outdoors for abysmal weather which includes hat and gloves.
For formal I choose a wedding outfit, a really smart outfit (long dress or suit) and a smart but less formal outfit.
Athletic has variants for general exercising indoors or out, plus outfits for cycling or yoga or whatever sports that sim is interested in.
Party has a standard party outfit, posh party outfit and costume outfit.
Swimwear is usually 3 choices for swimming, and 2 for sunbathing (usually brief outfits to avoid lots of tan lines, sometimes with sun hat and/or sunglasses, sometimes with flip flops or sandals).
