If you have MCCC you can have your settings to where premade vampires like Vlad cannot come in at all to your sims home.
If your looking for chaos the club idea is a good one.

Also, the way the game is designed is where Caleb and his sister are bartenders run the stalls etc in the game. Their needs decay when they are working. If they have been working too long their thirst decays to the point of them going nuts and attacking whoever the closest sim is. To me, it's always entertaining to watch Caleb lose it because his thirst had decayed to the point of forcing him to feed off another sim.
