I pretty much agree with everything you said. I like the Sims 4 but compared with it's predecessors I would describe it as the kiddy version of the franchise. Everything is so dumbed down, nothing bad ever happens, even the important career chance cards tell you the outcome before you choose an option, like why would I ever choose the option that I gets my sims fired if I know it beforehand? Where is the mystery, the excitement of not knowing the outcome?
The animations are over the top and childish. If you compare the way sims interact in the previous games with the way they do in the Sims 4. The basic human interaction is childish. A good comparison would be to look at how sims makeout in each iteration. In every game before the Sims 4 the sims really makeout, in the Sims 4 they politely kiss each other a few times, where is the passion?
My biggest issue with the Sims 4 is that everything revolves around moodlets. All the recent gameplay that was added and probably also the new likes & dislikes feature is solely designed to give sims moodlets. Moodlets don't affect game play in anyway, they just alter moods. My sims are already moody/bordering on bipolar without them adding in new features to make it more so.
They never add new animations for general social interaction so the game feels very stale in that way, seeing sims repeat the same animations over and over in the same conversation is just weird.
I honestly think they need to stop focusing everything around the broken emotion system.
