Well, technically, they can age again. IIRC, the Makin' Magic EP included a potion that aged children up into adults, but that was the only way for a child to age up.
Though how on earth did you manage to get a single mom in TS1? Don't the parents have to be living together to get the option to have a child?
I honestly don't remember because now that you mentioned it I think they do need to be living together. Knowing how I was back then I more then likely killed the father off.
