P.S. The fish should definitely not be in their inventory because they go foul quickly. If you go to your sim's cell phone, you'll see a button of a pen and pad. That will show all of the progress and which fish your sim has caught already and if they learned any bait for certain fish.

I completed the aspiration once. It is one of the most difficult, because it is so tedious to catch all the types of fish. You can sell the fish after they have been caught, makes no difference. I would advise to max the handiness skill, so you can enter the Grotto. I would also advise to get a yoga mat, the "Mind Concentrating" routine will give your sim a focused moodlet for 8 hours, which helps with fishing. I also kept frogs and produce in my sims inventory for bait.

The first time I did this was with a lone sim. The second time, I had two sims from the same household do this aspiration together and it seemed to have gone a lot faster. I found one sim had a better knack for catching rares. The rare ones were still a pain to catch though, especially the red tailed shark.
I don't think you need to keep them all in your inventory. They'll still show in your collection.

Go fish at the spot right at the back of the park in Oasis Springs (helps if your Sim has a fairly decent level) - you seem to able to catch a good variety up there; plus, it's really pretty and peaceful. The fishing spot near the Hermit's cottage in Granite Falls is a great place to catch lots of different fishies :)

Good luck! I'm doing it too right now on a scientist (he only fishes on his days off though). My biggest tip is find two cheap frogs and start breeding them right now for bait. I go with cheap to keep the household bills lower and you might need a bunch.. I'd go for at least a stack of 10. Also start a stack of medium fish... again I go for the cheapest I think that might be Bass or Trout .. it's been awhile and I'm not there yet on my sim. They can sit foul in your inventory.. I know that sounds gross but you'll need them for bait. At least they don't start stinking like bad food..
I just fish all over with plants that I collect in the area I'm fishing in until it's time to head to Sylvan Glade and Forgotten Grotto for the rare ones. Also that Red-Tailed Black Shark that you get in Oasis Springs Park.. I've only caught it from the two back fishing spots.

Just so you're aware unless they've changed it the Granite Falls fish do not count in the aspiration part where you have to collect 20 Different Types of fish (not sure if the Pufferfish would count either) the last time I tried this they needed to be the base game fish. So I would suggest completing the aspiration first and then send your Sim to Granite Falls to get the fish to complete the collection.

And no the fish don't need to stay in the inventory like any collection the game registers it in the log and remembers what you've cost. I would suggest writing down each type of fish or write out the complete list of available fish so you can mark it off. Certain fish are easier to catch with certain types of bait to check out the list above to keep track of that.

I'm really pleased that my sim went fishing for the first time and actually caught some fish! usually they don't catch anything on the first attempt.

Is different bait a thing? if so I'd suggest trying different baits to catch a wider variety of fish.

My only tip/trick is for boredom's sake more than anything because it seems most fish can be caught anywhere these days...but change locations often. If its a Granit Falls fish, go there and try the different waters. Sometimes differing scenery can help make it less tedious.

I think the reason I would quit the fishing in the past is that you really have nothing to do except watch your Sim fish. It's a little daunting and just have to exercise patience. Sometimes I will fast forward the fishing to speed things up but then I'm afraid I'm missing something.
