You could always play until you would feel satisfied with aging them up and then leave it alone. That way if teens have options to explore in GF, you won't regret aging them up, but if they don't, you can immediately age them up when the pack is released.
I play on Long and age up my Sims when I'm ready to do so. I just like to leave a game day or two between them to help set birth order.

IIRC, children do inherit fame, but I'm not sure if they're able to build on it by doing activities. And the actor career is full-time, so it's off-limits to teens too.
I recommend playing a bit to get your sim to the YA stage. It'll help pass the time while waiting for GF, and you'll be ready to try out the EP once it drops.
There's the new Drama Club afterschool activity -- maybe it would help prepare teens for the acting career?
I've got my current family that I plan to save to my library and start in a new save. Dad reached the top of the Athlete career but he's now working to be an esports player, Mom was a writer but is now a stay at home mom. (I want her to raise one more child, maybe adopt a baby.) I'm working on maxing out my eldest son's Piano skill so he can work on Guitar when he hits teen (I want to put him in the Entertainer career as a musician just to see how it works with the new features like Open Mic nights). I wanted to move him to San Myshuno but his mom needs for him to gain three personality traits for her Super Parent aspiration so he'll have to remain at home; I could have him write songs but not license them until he moves out as a YA.
These are all really good points to consider. I didn't think about the Drama Club. I suppose, if I leave him a teen, he can play around with the mic and perhaps get a head-start on his fame? At any rate, I only have to age up his older brother, wait for a couple of Sims days, or even one Sim day, before I age him up. In the interim, I could work on his mother's fame. In the backstory, she's already an Intergalactic Artist of Renown. The Sim paints like there's no tomorrow. If you've got a "Louise", you've got something akin to a Monet or a Renoir.
