It all depends on your goal, I had a homeless vampire with a goal of putting all my money into a dungeon to capture as many non-occult sims as I could as vengeance for putting my sim in his predicament. So personally from experience it can be pretty tough if you choose horrible weaknesses, like thin skinned for example. I have died from just checking my phone right as it turned morning, I reloaded afterwards cause I'm a save scummer.
So for rules? You could just make up your own to be as challenging as you see fit. I personally went with
-No sun immunity or resistance
-Can only pick a weakness based on their rank or choose to strengthen a past weakness (Powers are fair game, pick whichever whenever)
Fledgling (rank 1) gets Withered stomach, Guilty drinker, or hissing and Minor (rank 2) gets Sloppy drinker or thin skinned
-Can start as a fledgling or minor vampire
-Can't spam dark meditation
-Can't ask sims to drink from them
With Seasons you should have a much easier time, due to the addition of cloudy weather and being immune to extreme heat/cold, they can be naked in the middle of a blizzard and not even feel it. Not even mentioning umbrellas to keep them safe so you can skim out on putting points into sun resistance. So all in all it can be seen as an interesting take on the challenge or a hardcore version of it.
