I'd say wait for the next sale for Get Famous because the actor career is bugged right now and maybe by the next sale they'll have fixed it.
I found the Detective career a little repetitive before I even finished it the first time, but I still would probably do it again after enough time passes. The Doctor career has been a bit less repetitive, as you get access to additional tests and procedures as you level up. I also enjoy the challenge that you actually have to watch the patient to observe their symptoms to get the correct diagnosis, it won't just be spelled out for you when you run tests. I haven't finished it yet because my doctor sim is very family oriented and has used a lot of vacation days.
I have never finished the scientist career but I have started it several times and it's actually my favorite at the lower levels. I'm about to try it again with a sim that just aged up from teen today.
I haven't tried the retail system, but I have heard it has less depth and complexity than Open for Business.
Jungle Adventure has a lot of depth to it that I haven't even tried yet, despite having had it for years. The scenery is lovely. I have been to the temple once, and have taken families for slightly less adventurous vacations a few times, staying mostly on the cantina and museum lots. I'm really looking forward to getting further into the archaeology skill and putting together artifacts, but I haven't actually done much of that yet.
