If you're truly worried, I'd say go ahead and edit out that trait and give her something else negative for flavor, or you can lock certain rooms with valuables only to the household, or you can make a vault to store said valuables. There's a decent cooldown on klepto sims for swiping, and I don't think they can do it without getting caught if another sim is in the room. They get a debuff if they are caught stealing (or attempting it).
If anything, save, give her the key, klepto proof your house, and then see if she attempts to take anything. Most of the time that 'key' just allows sims to come in, steal some food out the fridge, watch tv, bother you to use your shower, and then come in to read your books. Usually also only with the sims who live there are home.
