Speaking of Adventurous Sims, there are a number of activities that count.
Skiing, snowboarding, mountain climbing, hiking yes.
BUT also: Diving, Snorkling, exploring caves, "Going on a rabbit hole adventure with your dog" (if your dog has the adventurous trait as well there is an option for that).
Also a number of careers automatically give the "On an adventure!" positive moodlet just by going to work: Any Astronaut career (and just doing space flights in general), Secret Agent career, going thru the portal to Sixam as a scientist...
