Ooh, great thread! I have this weird obsession with names since I tend to spend a ridiculous amount of time picking the perfect names for my characters. For human turned mermaid/men the name could really be anything one likes, but for mermaid/men born sims it needs to be a bit more creative I feel. I've had a look on my favourite name sites for some possibilities beyond Ariel and Triton:
Female
Aqua - colour name
Coral/Coralie/Coralia/Coraline - Coralia is also the name for a mermaid in a 19th century ballet
Pearl
Cordelia - heart; daughter of the sea
Marina - from the sea
Nixie - water nymph
Ianthe - purple flower and the daughter of Oceanus in ancient myth
Nerissa - from the sea
Delphine/Delphi - dolphin
Lorelei - alluring, temptress and also sirens from German myth
Ondine - little wave and also water spirits from myth, mermaid character in ballet
Ula - gem of the sea
Jewel, Angel, Minnow, Molly - after the fish
Tallulah - leaping water
Muriel - of the bright sea
Maya - water
Morwen/Morwenna - waves of the sea
Nerida/Nerina - sea nymph/mermaid
Male
Kai - this one has multiple meanings, but means sea in Hawaiian
Dylan - son of the sea
Marin/Marino - of the sea
Merlin/Marlin - sea fortress
Morgan - sea born, sea song or sea circle (also used for girls)
Marvin/Mervyn - sea hill
Hector - holding fast, also a type of dolphin
Dorian - child of the sea is one possible meaning
Murdoch/Murdo - sea warrior
Nereus/Nerio - water, god of the sea in Greek myth
Trent - the flooder, gushing waters
Zale - sea strength
Ren - water lily, lotus (also used for girls)
Hali - the sea (also used for girls)
Irving - green water
Kenn - bright water
Pike - a fish
Reed - red-haired
From this list I think I might use Coralie, Nixie, Ula or Muriel for mermaids, and Kai, Marlin or Hali for mermen.
