I think that the plumbob is the image of his body and mind since it changes with how your sim feel
And maybe when they the sim say "plumbob" the are talking about his body/mind
(With exception of the sims 2 psp guy, maybe it's an alien thing or maybe just a non-canon joke/easter egg)
