Luckily, most townies are full characters (who can be changed, deleted, and are treated as full sims in all respects) as opposed to special unchangeable ones. Safe money says the cameo sims will be more annoying for the fact that they're the same across all neighborhoods (I'm a fan of variety) than for being excessively up in your face. I'm expecting they'll be more like the pancakes, goths, or that New Girl knockoff family than anything else.

Again, making an educated guess, famous pets would be tricky when the things are completely uncontrollable. I'm not saying that it's impossible that obstacles course champions won't be noteworthy, but it's incredibly unlikely. For that matter, business owners are also unlikely to become famous just based on that.
Having said that, both Pet Training and Veterinarian are skills. Being famous for mastery of a skill also seems built in, so celebrity dog whisperers are very possible.
