Anything that acts as a Sim attribute will be described as a trait by the game. This isn't their way of saying any of these things are personality traits. There is no separate mechanism for assigning them.
Mods have been creating traits such as Depression, Autism and others for years upon years. The game assigns otherwise genetic things such as left/right handedness as a trait.
Even if they do categorize them differently, such as "diet" or "allergies", they will be understood as traits and more than likely show up in the trait panel.
They didn't do it to offend anyone. It's literally just how the game categorizes information. If they added something like a lactose-intolerant cow mascot to the game, I'd understand where you're coming from. Erratic was originally Insane; the trait suggests some degree of mental illness.
