I play rotationally and generationally, and aging is off.
What I do, in a New Save I create my custom NPCs, and "cheat" their skill Levels, So they have training. then download them as NPCs in my master Save to work. it worked a few time, but it's hard to nab the sims you want to work for you in your restaurant when the "Sims available to hire" window doesn't list the sims you want.
