For starters. Most books are written by doctors in their field, and more so than not, a non-doctorate degree professor will mostly just contribute to the book by helping with a chapter, or some level of consultation to the person who is actually writing the book.
When I went to university, most textbooks were written by the professor for that class. However most professors hold doctorates in other fields than teaching and took up teaching as a way to apply their academic knowledge or to subsidize their research. The only ones who might have teaching as their core studies are Education professors. This may have changed since but I doubt it.
