I always imagine Oasis Springs to be an imitation of Arizona or Nevada deserts.
Forgotten Hollow seems either Transylvanian or inspired by Sleepy Hollow, NY.
Granite Falls seems to be inspired by the PNW's temperate rain forest and the Cascade Mountains.
Most of Windenburg looks like old Germany, but the Von Haunt Estate seems to be based on Austrian architecture (Schonbrunn Palace, for example). The Island and the Bluffs don't seem to fit in either of the aforementioned countries, so I'm not sure which places inspired them.
There's no denying that San Myshuno looks like Hong Kong from an aerial view, but on ground I get vibes from several locales. The Spice District looks NYC inspired due to the brownstones (Brooklyn) and DUMBO (Brooklyn) because of the bridge. The Art District is Williamsburg-ish (Brooklyn) and also DUMBO-ish because of the building styles, factories, and close proximity to the river. The Fashion District and Uptown make me think of Tokyo or maybe Shanghai, but again, the entire city is easily Hong Kong when looking from above.
