Usually I have my Sims elope, but when I actually bother to put together a wedding, I put time and effort into finding and decorating the right venue. I've gone into properties via manage world to rearrange furniture, to place lighting that'll be appropriate for the time of day, and to arrange decorations behind the wedding arch.
I went to a real-life outdoor wedding that the bride had timed so that the sun dipped behind the building just as things started. Everything had that beautiful glow, but there was still plenty of light to see by, and it was sunset just as the ceremony ended. It was beautifully done, so I've done a lot of sunset weddings for my Sims as well. I'll put lights in bushes behind the arch so the wedding is daylight (or sunset) and the reception is evening.

It's one of the less fancy that I've set up, but went really smoothly. I had someone bake the cake and put candles on it before the event, then stick it in the fridge. I've had a lot of mishaps in the past with Sims eating the cake, so I guard that thing. I don't schedule them ahead of time. I mentally plan them, but I got used to having events happen NOW in Sims 4, and I have pushed back an event hours or even days when something unexpected happened.
So my options are: Crazy planning for days, repeatedly inspecting my scenery, rearranging households so I can make sure everyone I want to attend actually comes, and micromanaging everything until after the cake is cut... or eloping. There's no middle ground for me. When I bother, I make it good. But I usually don't.
