I find that if you set up a venue as a lounge, that seems to work best for bowling alleys. Bars don't seem to work so great because sims want to hang around the bar/bartender area too much, so I make the venue a lounge/bowling alley/arcade... fun for the whole family. And then set up the required bar, microphone, and musical instrument stage area upstairs in a private area far away from the kiddies' bowling/arcade/skating/play areas on the main floor.
Ideally, I wish we had a proper bowling/arcade venue rather than having to use an adult venue like a bar, lounge, or nightclub. Bowling is supposed to be fun for the whole family, not just adults hanging around a night time venue ordering drinks and socializing.
