My Sims always have a story attached to them. That's how I stop myself from getting bored. As mentioned above, I even imagine conversations over meals. But when I get bored of my Sims, there's a couple ways I try to spice things up:
1. Get someone pregnant. This is especially fun for me when money is tight, as I imagine my Sims freaking out over supporting the kid.
2. Make someone have an affair.
3. Make sure freewill is on and send my Sims to the park. Watch what they do.
4. Meet someone new. They may be a new romantic interest, new friend, etc.
5. Change one of the more boring Sim's traits to make them more "interesting".
6. Use a trait randomizer and move someone new into the house. Or move them int the neighborhood and have the family I'm bored of interact with them.
That's all I can think of for now.
