What is your least favourite skill?

Baking. I know that it has been changed a bit and it is not so obnoxious, but I REALLY loathe that skill...

Mischief. I always feel bad for theses sims who have to suffer from this. The only mischief activity I found amusing is painting the del sol valley famous sims boulevard and the soap in the well.

Mine's probably the Mischief skill too but only because I've not used it much until now.

I agree about herbalism; never bothered much with it since every potion you can make is in the aspiration rewards and I always have more than enough points.

The only skill I haven’t used at all is the Veterinarian skill.

Mischief and herbalism

The DJ mixing skill, because all a Sim has to do is stand next to a DJ booth to acquire it. That's like watching a doctor treat a patient, and saying "Ok, I'm a doctor now"

Charisma - skilling that up is the dullest thing ever...

My Sims all need Charisma and Logic, but levelling them can be a grind. Plus not all my Sims have chess sets.
Fishing seems to take forever to get started with every Sim. I keep it for a select few and no one has gotten good at it, yet.

Research and Debate. All my sims go to University so trying to level that up as a teen to prepare them is tedious.

Why do it before Uni? You have plenty of time to learn it there. Either join the debate team and / or use the research machine a lot. Bonus points for researching Research at the Research machine...
Oh and put some research machines down at every library in your game. Then any of your sims can learn it at any time, easily. Plus making money by giving knowledge to the machine.

Btw, keep an eye on what's offered for secondary courses when you pick your courses for the semester. Sometimes a Debate / Research course is given. That's a no-brainer to take that one...

Don't stand before a mirror and practice debate, that is tedious and a bad tactic (just like with Charisma; never do the mirror thing, do actions that give you charisma instead).
