This is what I do too, with the odd addition of love interests or siblings every now and then. I've only really moved out one Sim (from Newcrest to Oasis Springs) and thus never play her anymore.
Right now I'm at a point where most of my Sims should age to either Elder or Adult. The matriarch of the family is currently living with her deceased-husband-now-ghost (yes, they had a second marriage ceremony!). I'm considering letting her die of old age, but I just like her so much...argh!
