It really depends on the Sim and if I'm doing a challenge or not. Most of my Sims start out Rags to Riches without any type of home, but once they acquire enough simoleans, their first home usually consists of:
Living room/Kitchen/Dining combo
Bathroom
Bedroom w/desk & computer
Outside they'll usually have a garden. When they can afford it, they'll build a Greenhouse. I usually include a charcoal grill and a patio area with seating. But sometimes they'll just have a firepit with a couple log stumps. If it's a painter Sim, I'll put their easel under a big shady tree in the backyard and eventually build them an artist's studio. Athletic Sims get a basement gym. Very rarely they might have a hot tub or a small pool in the backyard, again, once they can afford it.
If/when the Sim marries/has children I add on to the home inside & outside as needed. Most all of my Sims' homes are one story, two on occasion, but it's rare. I like tiny/small homes for my Sims.
I think the biggest/grandest home I've ever built was for my Time Lord challenge Sim. Artist has a massive underground Tardis using both basement levels which includes; a photography studio, artist studio, pool w/hot tub and meditation area, full kitchen with a bar area, dining room, a music room, two bathrooms, her office/lab area with a microscope, computer, specimen refrigeration and her massive research library, a locked storage area with found treasures, gym, Master bedroom, the control area with satellites/security cameras, etc. and of course, the beautiful Heart of the Tardis glowing & pulsing, full of life that keeps the whole place running.
Above ground is a public restroom with a small locked room on the back that contains the staircase to the Tardis, a garden, picnic table with grill, horseshoes pit, firepit with stump chairs and a fishing pond. It was built to look like an unassuming public park. I absolutely adore that build but can't play it anymore, it's so big, it lags my computer. o.O
