You can disable the documents backup in One Drive settings by going into the Sync and Backup, selecting Manage Backups in the Back Up Important PC Folders section and then disabling the sync of the Documents folder. You can then select your account page and choose only specific folders to sync.
I pause my OneDrive before starting Sims 4 and I have had no issues with the file systems for my various instances of the game.
